Vegan Baobab Chilli Chocolate Mousse


For the baobab chilli chocolate mousse: 

300 g dark (dairy free) chocolate – we like 70/85% dark

1 tablespoon coconut oil 

2 medium sized avocados (mashed)

2 tablespoons coconut sugar

1/4 tsp cayenne pepper

1 tablespoon baobab powder

For the caramelised marula nuts: 

1 cup *marula nuts

1/4 cup coconut sugar

1 tablespoon coconut oil

1 For the baobab chilli chocolate mousse: 

2 Melt the chocolate and coconut oil in a bowl over boiling water, stirring constantly. Leave to cool and stir in cayenne pepper, avocado and baobab powder. Add sugar and put into smaller dishes, or simply leave in the bowl to dish up later. Refrigerate for a couple of hours. 

3 For the caramelised marula nuts: 

4 Place all the ingredients in a frying pan and heat, stirring constantly until the sugar melts. Make sure all the nuts are coated with the caramel and set aside to cool. Separate the nuts before they set.


Serve the mousse with a spoon of coconut cream and the caramelised nuts sprinkled on top.
