Next time you feel peckish, before you run off for those fast fixes at the corner store; try whipping up these super simple superfood twist on the banting trend.

These superfood creations are a vitality boosting treat full of nutrient dense, life giving baobab powder, chia seeds and nut butters. Each ingredient adds a unique health benefit to these delicious snacks, with sweet fibre rich dates and chia seeds that keep you full, protein rich almonds and coconut oil lending super healthy fats,  with mineral rich baobab and cacao to top them off.

Great for anyone who loves a nutrient and energy rich snack, these are ridiculously easy to make – you almost literally just throw everything in a food processor. Keep them in the fridge and grab them as you need for the healthiest on the go pick me up.

Recipe

Makes 20 Baobab Energy Balls

Ingredients

  • medjool dates – 1 cup
  • almonds – 3/4 of a cup
  • chia seeds – 2 tablespoons
  • coconut oil – 1 tablespoon
  • almond butter- 1 tablespoon
  • raw cacao powder – 1 tablespoon
  • baobab powder- 1 tablespoon

Instructions

  1. Place the almonds into a food processor and blend until crushed.
  2. Add dates and all other ingredients on top, and blend until everything is thoroughly combined and sticky
  3. Roll the mixture into small balls
  4. Place in the freezer to set for at least an hour

Enjoy! You can roll these in some baobab and/ or cacao powder before setting.
