Cheezy Marula Nut & Shiitake ‘Bacon’ Sauce

Serves 4 – 6


*for the shiitake bacon

5 cups shiitake mushrooms, thinly sliced

1/4 cup extra virgin olive oil

1 1/4 teaspoon sea salt

1/2 black pepper

*for the cheezy marula nut sauce

3 tablespoons extra virgin olive oil

1/3 cup cassava flour

2 garlic cloves, minced

3 cups marula nut milk

*make your own by soaking marula nuts overnight, draining and blending (3 tablespoons nuts to 1 cup filtered water) until creamy, then straining through a nut bag – easy peasy!

1/2 cup nutritional yeast flakes

2 tablespoons tomato paste

2 tsp sea salt


Preheat oven to 190°C. On a large baking sheet lined with baking paper, toss mushrooms in olive oil, salt and pepper. Bake for about 30 minutes, turning around every 7 minutes or so until lightly browned, crisp and bacon-like. While you are tending to the mushrooms, in a medium saucepan make a paste by whisking the olive oil and cassava flour over medium heat for 3 to 5 minutes. Add garlic and let cook for 1 minute or so. Then add the marula nut milk, nutritional yeast, tomato paste, and salt to the saucepan and bring to the boil, whisking frequently. Reduce heat to low and let simmer until the sauce thickness. Add a squeeze of fresh lemon if you like and use as a pasta sauce or serve with amaranth, sorghum or potatoes.
