Root Veggie Super-Patties

Ingredients

2 medium potatoes

2 medium beetroots, peeled and grated

3 medium carrots, peeled and grated

2 heaped tsp raw baobab superfruit powder

2 Tbsp cassava flour

1/2 – 1 tsp garlic powder

1 tsp onion powder

Sea salt to taste

Pumpkin seeds for serving

Preparation

Steam the sweet potatoes, remove the skin while still warm and grate. Mix in the grated beetroot and carrots.

Add the cassava flour and baobab powder.

Finally, add the garlic powder (add more or less depending on your taste), onion powder and salt to taste and mix together.

Use your hands to shape into medium sized patties, about the size of the palm of your hand.

Fry in a pan in oil of choice (we suggest extra virgin olive or coconut oil) for 1 to 2 minutes on each side.

Once cooked, serve with fresh greens and a dollop of Creamy Bao-mole Dip.
