Raw Baobab, Cranberry & Citrus Immune Boosting Balls

Makes 12 balls

Ingredients

1 1/2 cups raw marula nuts

1/2 cup desiccated coconut and more for rolling (can put coconut flakes in a blender)

1/2 cup dried cranberries

3/4 cup medjool dates, pitted and roughly chopped

1-2 Tbsp fresh squeezed orange/lemon juice

1 tsp orange/lemon zest and more for rolling

2 heaped Tbsp raw baobab super-fruit powder

1/2 tsp pure vanilla extract

Pinch of fine sea salt

Preparation

Blend the marula nuts and coconut in a food processor using an S-blade until a coarse meal is achieved.

Add all the rest of the ingredients and process until a rough, sticky and firm dough is achieved.

Taste and add more orange or lemon juice if you desire.

Roll into small balls until you reach around 12. Roll the balls into the extra coconut and orange or lemon zest and store in an airtight (preferably glass) container. Will keep for up to a week. Perfect for healthy kids snacks!
