With Marula nuts and Baobab powder
Vegan & Gluten Free
1 cup popped golden Amaranth grain
1 cup raw Marula nuts
1 cup pitted dates
1/3 cup coconut flakes
1/4 cup cacao nibs
1/3 cup coconut oil
3 tbsp Baobab powder
1 tsp vanilla extract
1 tsp cinnamon
First of all, pop 1 cup Amaranth grain. Heat a heavy-bottomed pot until VERY hot, no oil required. Test it by splashing some water on the bottom – if it sizzles and evaporates immediately, then you know it’s ready! Then, spread a thin layer of Amaranth grain on the bottom. Cover with lid, and wait for it all to pop completely. Pour into a bowl and repeat until all they are all popped.
Then, combine all the ingredients (except the popped Amaranth grain) in a high speed food processor. Once everything is finely blended, transfer to a bowl and mix in the Amaranth.
Roll into balls or bars – whichever you prefer – and put in the refrigerator to cool and harden. Serve and enjoy the energy boost!Go Back
